In Irun, the cider-making tradition is kept alive in restored historic buildings, including an old ironworks, where the ritual of serving cider directly from the barrel – known as the txotx – is still practised. This experience combines natural cider with traditional dishes, enjoyed whilst conversing at the table in an atmosphere steeped in history and authenticity.
